Overheating?

New to this site, need help,

The TA overheats for about 10 seconds at a time, then goes back to normal driving temperature.

I have a new radiator, a new thermostat, and a new heavy-duty clutch fan.

Got advice to bypass the heater core, could this be the issue?

Any suggestions would be helpful.

What temp is “overheat” for 10 seconds, and how often does it do it?

I’ll be driving for about 5 minutes, and it'll be normal temperatures between 180 and 200, then shoot up to the 260 mark for a few seconds, then return to normal for another 5-10 minutes and repeat, usually at low speeds.

There is also a new temp sensor.

I have shut it off when the temp is up, and you can hear the water bubbling, so it’s definitely getting hot.
